The house

A cellar tavern below Plaza Mayor, since 1964

You walk down a few steps from Cava de San Miguel and step into another Madrid. Brick vaults, a wooden bar, walls full of memories and, at the back, the griddle piled with mushrooms, slowly sizzling away.

We’ve been here since 1964. Over sixty years doing what gave us our name: our griddled mushrooms, made right in front of you, no tricks, with our recipe, the same as ever. Some come for the first time, others have been coming back for decades. And some are just passing through and make us a must-stop. To all of you, of course, thank you. We love you and we have a great time with everyone. Because “El Champi” is all of that: fun, joy, flavour, history, stories, warmth and people.

Behind the bar you’ll find people who have spent half their lives at the Mesón and are always glad to look after you, to listen to you and to show you our way of eating them, which makes them one of a kind.

And before you leave, take a look at the walls. Among the photographs and keepsakes you’ll find many of people just like you, in which we’ve somehow become part of their story. Come, enjoy and be part of it!

Madrid changes. El Champiñón is still here. Since 1964.

The house dish

Griddled mushrooms: our one-of-a-kind recipe

The dish the house is named after, and the reason for the queue at the door. The recipe has been ours since 1964 and never leaves this kitchen: you won’t taste them like this anywhere else.

A plate of griddled mushrooms topped with chorizo and toothpicks
  1. Since 1964

The same recipe, plate after plate, since we first opened our doors on Cava de San Miguel.

  2. House recipe

How we make them is our secret. What matters is how they taste — and you can only find that out here.

  3. Right in front of you

Cooked right in front of you on our trusty griddle, then on to the bar or your table — always ready to enjoy.

How do you eat them?

One toothpick in each hand, lift it carefully and pop it in whole. That way you keep all the juice — the best part.
